RECIPE: STRAWBERRY RIPPLE ICE CREAM SANDWICHES⁣ It’s National Ice Cream Month, so I have a gorgeous recipe for you to enjoy today! These ice cream sandwiches are made with local Ontario vanilla ice cream and taste so delicious. With the sweltering heat, this no-bake dessert is the perfect thing to stay cool. And guess what? You can make them in advance and freeze them!⁣ ⁣ INGREDIENTS:⁣ 250g hulled and sliced strawberries ⁣ ½ lemon, juiced⁣ 100g granulated sugar⁣ pinch of sea salt⁣ 1 liter local vanilla ice cream (I used @kawartha_dairy)⁣ 8 chewy-style cookies, I used oatmeal (7-10 cm diameter) ⁣ 4 Tbsp coarsely chopped, unsalted, shelled pistachios⁣ ⁣ PREPARATION:⁣ Combine strawberries, lemon juice, sugar, and sea salt and place over medium heat in a medium pan. Bring to a boil and stir constantly for 5 minutes. Make sure to scrape along the sides and bottom of the pan. Cook for another 5 minutes; the sauce will reduce and thicken. Transfer into a heat-resistant bowl and allow to cool. ⁣ ⁣ Line an 8½ x 3” loaf pan with parchment paper, leaving a 2-inch overhang on both sides. Spread ice cream, scoop by scoop into loaf pan, to create one layer. Flatten with an offset spatula. Drizzle with strawberry sauce, and swirl into ice cream with a metal or wooden skewer for the ripple effect. Repeat with another layer of ice cream, and end with layer of strawberry sauce (it should be room temp). ⁣ ⁣ Assemble: add a scoop of ice cream on each cookie, gently sandwich cookies together. The ice cream should spread to the edge of the cookie. Roll the edges in pistachios. You can also freeze the ice cream sandwiches for 1 hour before serving, and wrap each sandwich in plastic wrap.
