Pan fried tomatoes with cucumber salsa by @noorishbynoor. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Amazing how much flavour you can extract from these seasonal tomatoes just by showing them some love. A quick fry in olive oil spiked with maple syrup, garlic & oregano gets them nicely caramelised and jammy. Meanwhile you prepare a refreshing cucumber salsa mixed with fresh herbs, capers, garlic and vinegar to spoon all over. Together, the balance of flavours and textures is outrageously deeeeelicoous (especially that puddle of liquid gold you’re left with from all the juices).
