🥞🤩 Baked Oatmeal Pancakes by @megunprocessed 🥞😛 The easiest way to make pancakes! Eat them like regular pancakes or make a pancake sandwich like I do for Ro’s lunches. It’s a healthier pancake packed with some good nutrients 👏 Tag someone who’d love these 👇 Ingredients * 2 cups rolled oats (gluten free if needed!) * 1 cup plant milk * 2 tsp apple cider vinegar * 1 banana * 2 tbsp apple sauce * 1 tsp baking soda * 1 1/2 tsp baking powder * 1 tbsp date sugar, coconut sugar or maple syrup INSTRUCTIONS Preheat the oven to 350 F.  Mix the 1 cup plant milk + 2 tsp Apple Cider vinegar together and let sit. Add the 2 cups oats to a food processor and blend until it becomes a flour like texture. Add 1 banana, apple sauce, 1 tsp baking soda, 1 1/2 tsp baking powder and 1 tbsp date sugar. Run the food processor on high to blend together and pour in the milk + acv through the top. Everything should be combined together. Line a baking sheet with parchment paper. Scoop 1/3 cup or smaller on the sheet. Make sure to keep them about an inch apart. They don’t spread too much.
