I get the best results for my grilled zucchini when I’m able to cook them for at least 20 minutes – about 10 to 12 minutes on each side. For this recipe I dressed the grilled zucchini warm off the grill with a simple salad dressing enhanced with a bit of fresh garlic and chopped ripe Fresno chili along with green herbs: cilantro and Italian flat leaf parsley. I added my aromatics to a dressing base made with olive oil and fresh lemon juice in a 60-40 ratio and seasoned with salt to taste. I let that dressing sit while I grilled the zucchini - a little time for rumination helps the aromatics develop more intense and delicious flavors.
