How to make Pork chops, pineapple salsa + hot sauce Marinade for pork chops: olive oil, S&P, garlic, ginger, lemon, paprika, cumin, fennel seeds. Pineapple salsa 1 sml Pinapple 1 large tomato 1 sml red onion 1 lime Handfull of coriander (with a little fennel and mint) Olive oil, a pinch of grated garlic. Soy, S&P Fry the pork chops in a little oil. I like to fry the skin a little first, a couple of minutes each side with a decent rest. I finished these with a little honey too. Fry some boiled sweet potatoes in the same pan. (Make sure they’re well drained first) Carve the chops, serve up with the salsa, spuds, resting juices and hot sauce. We make a version of this salsa almost every week for Taco Tuesday! Goes well with BBQ chook and pork!
