As you prob already know, @jeromequilbeuf and I go back a long way.. More than 10yrs in fact,ever since he was head chef at one of my fav restaurants in the world Sant Pau⭐⭐⭐ by legendary Carme Ruscalleda, a must stop for me whenever I was in Barcelona. I look back fondly at our good times from Bangkok to Tokyo, via Paris But I must admit, I was pretty late to catch the much-hyped train on his @jerome_cheesecake as I, for one, am not a big cheesecake fan - in fact, any cake for that matter 😅 but the moment I tried it for the first time in Ginza Tokyo last year, I rang up bro @dej_kewkacha and said "you gotta bring this cheesecake to Thailand" - no 2 ways about it, it is the best cheesecake I've had in my life and I'm very sure it will be for most Thais (or anyone for that matter) The complexity, nuances, balance, umami, taste, texture.. Everything is perfect about this simple looking cheesecake - it is ultra rich and savory, yes, but in such a way that leaves you wanting for more There was discussion about importing the cake, frozen, from Tokyo but taking the easy route has never been the @dej_kewkacha way and @jeromequilbeuf felt that wouldn't do justice for the cake and Thai customers.
