You challenged me with random ingredients to work with and this week, I chose Chocolate and Chickpeas. This recipe turned out so delicious, I couldn’t wait to share it with you 😁 Here is the recipe as promised 😁 - Ingredients- 1/2 cup or 85g toasted Almonds 1/4 cup or 35g toasted Cashews 1/4 cup or 30g toasted Pistachios 6 tbsp or 25g Cocoa powder 1/4 cup or 47g cooked Chickpeas 1 cup or 195g Dates (soaked for 10-15 mins in warm water) 1/2 tsp Vanilla Pinch of Sea salt - Chocolate coating - 1 cup or 180g Dark Chocolate 1-2 tbsp or 12-24ml Coconut oil - Garnish - Sea salt Toasted Almonds, Pistachios & Cashews - Procedure - - Toast the nuts in a high temperature oven for a few minutes and leave them aside to cool - Soak dates in warm water for 10 minutes - In a food processor, add the toasted almonds, pistachios, cashews and blitz until you get a powder. - To this, add cooked chickpeas, cocoa powder, pinch of sea salt and blitz again. - Next add dates & vanilla and blitz until it comes together to make a dense sticky mixture. - Transfer onto a parchment paper and make it into a rough square. - Wrap it up and set in the freezer for 20 minutes after which you can cut them into any shape you want. - Melt dark chocolate with coconut oil. - Dip each piece into the chocolate mixture and place them back on the parchment paper. - Sprinkle some sea salt and toasted nuts on top and set again in the fridge or freezer. - They’re ready to eat when the chocolate is set. - Packed with healthy ingredients, these are high in protein and give you lots of energy.
