Bison Brisket, provoleta, spicy beans, and garlic bread. I used a 5 pound bison brisket from my friends @buckwildbison for this one. Stuck it with my @meatermade meater+ to track temp and seasoned with @spicelopedia Texas Brisket. Hung in the @pitbarrel until it reached 165 degrees, then wrapped in foil with beef broth and back in to finish at 203 degrees. Once it was out and resting in the cooler, I lit up the @alacruz_ and made the sides. Beans were spiced up with @melindasfoods Habanero BBQ sauce. The @cheesebrothers provolone was topped off with some tasty jams from @gourmanity - Purple Fig Jam, and Spicy Mango Confit. Then I sliced up the brisket, and the feast was on!
