How to make Kasoy meat sauce! Kasoy is a delicious noodle soup made from a spicy fermented bean paste (pungent smell but really delicious) also known as thopezay which I had ordered from @mienmarket for this authentic fermented bean paste, go check them out for the real homemade fermented bean paste, they ship! The broth is typically made with any beef or pork bones seasoned with fish sauce, salt, pepper, onions, garlic, ginger since most of the flavoring is in the meat sauce. To make the Kasoy, you’ll need: - 1 cup of oil - mince 10 garlic cloves - 4 shallots, fry this on medium heat - 1 package of fermented bean paste - add 2 cups of chopped tomatoes - add 2 tbls paprika (add in more if it you like more red), mix this for 5 mins - add 3 pounds of ground pork, cook in med high heat for 10 mins. Let this simmer on low for 25 mins (add more water if it looks too dry). For noodles typically pho noodles are used, but any noodles will work. This makes a lot of meat sauce so you can freeze them but they do keep in the fridge for about a week or so. Next add chopped cilantro, scallions, lime, and any veggies you like. You can also add shrimp, beef balls & sliced beef. For more spice add in chili oil. Kasoy is a family favorite and so handy to have for easy meals.
