Roasted Veg Pasta 😍 coming in with this weeks budget friendly meal and it’s another good one. I’ve been making this hidden veg pasta for years. I had it nearly every night when I was pregnant along side broccoli if you know you know 🙃 Coming in at £4.34 this served 3 people with a side of garlic bread. The quality of this video isn’t the best as I filmed it at 5am one morning and it was still slightly dark 😎 Ingredients; - 1 Red Pepper - 2 Red Onions - 4 Salad Tomatoes - Whole Garlic - Italian Seasoning - Chilli Flakes - Salt & Pepper - Parmesan - Fresh Basil - Garlic Bread - 210g any Pasta Method; - Add your cut up veg to an oven proof dish and add some olive oil and your seasonings. - Roast in the oven for 40 minutes or until everything is soft. - Whilst the veg is cooking add your pasta to some salt water and cook, set aside once cooked. Saved a ladle of the pasta water. - Remove your garlic cloves and add your veggies and garlic to a blender and blend. - Add your roasted veg sauce, pasta and a paddle of the pasta water to a frying pan and slowly cook so the sauce thickens slightly.
