Gaeng Nor Mai 💚 (Lao bamboo stew with quail eggs, mushrooms & pork ribs) poured over a bowl of jasmine rice. YES, this can be customized by adding any protein (like shrimp) you like or veggies (pumpkin, zucchini blossoms which are my favorite!). Grew up eating lots of my mom and aunties Gaeng Nor Mai, thankfully I’ve learned how to make this! Made with bai yanang extract (tiliacora triandra leaves - you can get this in a can these days) is what makes the soup dark green. There’s chili peppers, pounded sticky rice used as a thickener, mushrooms, loaded with quail eggs, rice paddy herbs (pak kayang) as well which gives this soup a distinct aromatic flavor. I’m sure many of you Lao folks remember eating this with your families growing up.
