Sausage Pasta Bake It’s back to school this week for most of our kids and I wanted to share this delicious, budget friendly, family crowd pleaser. This can easily be made in advanced and then finished off in the oven as and when you need it. If you want to get ahead, then why not double up on quantities and make one for the freezer? Freeze at the stage before the oven, then defrost slowly overnight and cook in the oven. Serves 4 INGREDIENTS 2 red onions - finely chopped 5 cloves garlic - crushed 6-8 good quality sausages 2 tins tomatoes 300-400g dried pasta 4-5 tablespoons grated Parmesan Salt & pepper Basil to serve White sauce 570ml milk 25g plain flour 50g butter METHOD Preheat the oven to 200 degrees c (conventional) Sauté the onions until soft and sweet. Add the garlic and cook for 2 minutes. Chop the sausages into 4/5 pieces using kitchen scissors. Add to the onions to colour for a few minutes. Pour in the tomatoes and 3/4 can of water. Bring to a simmer, season and cook on a low heat for 30-45 minutes. White sauce - all in one method Add everything to a small pan and stir using a whisk, cook on the lowest heat until it begins to thicken. When the sauce is smooth and glossy cook for another 5 minutes to remove any raw tasting flour. Check for seasoning. Cook the pasta so it is really al dente - about 3/4 minutes less than packet instructions. Toss with the tomato sauce. Add to an oven proof dish. Cover with white sauce and plenty of Parmesan.
