🚨 NERD ALERT 🚨 : Coconut Pandan, one of the most requested tarts EVER is BACK for the September menu and I think it’s time we all learnt a little more about it. ✅ Coconut Pandan Tart 👉🏼 Coconut caramel, coconut cake & a coconut pandan glaze. Quite a few of our tarts boast a glaze, and I’m sure you’re thinking, what’s a glaze and why do we use them? Cat took to the Tarts Anon kitchen to find out. 🕵️‍♀️ Glazes are liquids that utilise a setting agent and are mostly used coat to cakes or mousses. For our tarts, glazed are used as an alternative to an icing or cream and as key flavour and texture component of the tart. The use of a flavourless setting agent (such as Pectin X58), means we need to rely less (or not at all) on other stuff that will negatively impact the flavour of the glaze (such as in a buttercream). That means we can achieve more intensity of key flavours. Also, as it pours onto the tart in a liquid state, the tart is layered with a smooth, extremely consistent coating, allowing each bite of tart to be the desired texture and taste as every other one. 🤯 That’s all the information I have for now but no doubt there’s more to come as this story unfolds.
