I’m not even sure where to start with this week. Let’s say I went from zero to 100 overnight. With Boinks being back on his normal routine I could finally start catching up on life and didn’t sit still until now. A lot is gonna change the next weeks and there’s a lot of adjusting to do breaking away from my normal work and life routine into probably working and hustling 7 days a week. I hope I’ll still find time for content, but as long as I do my weekly orders I’ll try and grab as much material from those as well. One thing I’ll focus on more is my subscription and content for my paid substack subscribers. (Find the link to subsribe and support me in my profile 😁) I’ll dive more into details like hydration, flours, starter maintenance and also scheduling which I’m mastering at the moment with no electricity up to 12h per day and temperatures in my house of 18°C. It’s a maniacal phase and hopefully won’t last for too much longer. Fingers crossed they get this electricity crisis figured out until summer. 🙏🏼💡 On a positive note, I got this beautiful wood top this week giving me bigger bench space and I’m so in love with the colour and grain of this recycled Oregon pine. Such a vibe to work on and makes working with bigger batches much easier! 🥰 Prepped 45 and 3 tiny country loaves today and 12 seeded rye loaves, almost 45kg of dough! 💪🏼 What you see here is one batch of 15 loaves as I normally work in batches of 15.
