Long time no shaping reel. Here is a little Sunday dough for you that I just shaped in this wonderful gloomy kitchen light. It’s been proofing pretty much all day. I mixed it up at 9am and shaped it over 8h later and it’ll still sit outside for another hour or two. My kitchen is 17-18°C at the moment and it’s good and bad. It helps heaps with keeping a strong gluten network and upping the hydration to get a creamy crumb, but it also takes forever and you need to start early to not lose sleep over it. This dough is 50% whole grains, leftovers from Tel Aviv. It’s 25% whole khorasan and 25% whole wheat which I mixed with local sifted wheat flour and it’s leavened with 22% rye starter that was made with 50/50 sifted and whole rye. Hydration is 90% which looking at this dough I almost can’t believe. I’m always so amazed how differently flours take water in and what those flour, temperature and mixing do to them. This dough I mixed to almost full gluten this morning and then left the house for 3-4h and only did a couple folds when I was back.
