MEXICAN CHICKEN ENCHILADAS, epi3, #BackToSchool Yusuf has started secondary school and he loves it! He reminds me of #YoungSheldon and I’m no different to Mother Mary who will always worry! Making life way with the new @nakanoknives #verysharp and makes chopping, slicing and dicing easy, quote HUNGRYHIJABI10 for 10% off your one, they look really stylish too with the bamboo handle Yusuf truly believes he has Mexican bloodline because he loves all things Mexican so here’s my take on #ChickenEnchiladas. This week I’m refilling my freezer with 5kg #bonelesschicken because #chicken is what the kids love to eat after school For the filling: ☘️4 boneless chicken cut very small ☘️2tbsp oil ☘️3tbsp taco mix- paprika cumin chilli garlic salt oregano ☘️2 jars pasta sauce bbq flavour - or add bbq on top ☘️optional extras options and red peppers ☘️1 cup sweetcorn ☘️1 cup mushrooms For the wrap: ☘️16 #tortillawraps ☘️1 bag motzerella ☘️olive oil 1. Cook chicken with all ingredients until fried 2. Add sauce 3. Add olive oil on bottom of dish, fill wraps and lay. I used two dishes. 4. Add sauce and more cheese on top and inside the wraps 5.
