It takes a lot to get me out of the apartment on a Monday night. Especially one as hazy, hot, and humid as it was on the evening of August 28, the last Monday of August. But when Averna (@avernaus) invited me to attend an alfresco Sicilian-inspired “farm to fire” dinner hosted at the New York Marble Cemetery (@newyorkmarblecemetery), the oldest non-denominational cemetery in New York City, despite a looming book deadline and the oppressive heat, I couldn’t say no. The dinner’s theme was “arrivederci ad Agosto” and the live fire and smoke menu was curated, cooked, and presented by chef Daniel Sabia (@danieltasabia) and his team at Wood Fire Food (@wood_fire_food) in Hudson Valley, New York. We drank Averna Limonatas, Boulevardiers (with char-grilled orange slices), and Espresso Martinis, closing out dinner with the Averna Ritual. And some of my favorite dishes of the night were Smoked Beef Cap and Black Plum; Swordfish Carpaccio and Nectarines with Fermented Chili, Smoked Olives, and Basil; Grilled Cantaloupe and Raw Cow's Milk Burrata; Coal Roasted Summer Peppers and Marinated Mussels with Chili Honey and Pepper Dressing; and Whole Roasted Leg of Lamb, glazed with an Averna and Anchovy Dressing, Rosemary, Smoked Garlic, and Chimichurri.
