🍕 Fennel sausage ragu… 🍕 ———————————————————- …with creamy stracciatella, gremolata and fresh chillis. If you follow my stories you’ll recognise this fennel sausage ragu as one that I make quite often as a pasta dish. It’s an adapted Jamie Oliver recipe I’ve been using for years and it always delivers those big bold flavours. I knew it would work perfectly on pizza so had to give it a go. The ragu is a base of carrots, celery, spring onions, chilli, fennel seeds, oregano and sausage meat (I buy high quality fennel sausages that are removed from their casing). That’s fried off until you get crispy and caramelised edges on the sausage meat. Then I add in garlic and balsamic vinegar along with a tin of chopped tomatoes and simmer until thickened. Season to taste. I wanted to keep this light and fresh, so paired with delicious burrata stracciatella and a zingy gremolata containing parsley, lemon zest, lemon juice, garlic and EVOO. Finished off with some fresh chillis and plenty of parmigiano reggiano it was an absolute delight 🤤. This was also the first time using the Neapolitan arch in the Gozney Dome and wow does that hold a high temperature 🥵😂. It gets up to temp so quickly and the stone was regularly hitting 500°C. It will take a bit of getting used to working so fast again but was really happy with the results.
