(Recipe) Summer Harvest Pavlova, baked in a tart ring - To bake the Pavlova in the tart ring, just line the ring with parchment paper. This Pav’ is composed of French meringue, peach confit, citrus curd, whipped ganache and fruits. Candidly, I made this dessert to use both the leftover egg whites all the fruit I had in my fridge before leaving on vacation. Pavlovas are the perfect dessert to use all the leftovers! 😅 FRENCH MERINGUE 150g egg whites 150g sugar 150g powdered sugar 1 teaspoon cornstarch PEACH CONFIT 600g peaches, skin removed, cut in cubes 200g peach purée @les_vergers_boiron 80g sugar 50g lemon juice 40g pectin, combined with 120g sugar CITRUS CURD 150g lemon juice Zest of 2 limes 115 g of sugar divided in 2 2 egg yolks 2 eggs Pinch of salt 58 g butter soft (1/2 stick) 1 gelatin sheet, or 2.5g powder, 200 bloom WHIPPED GANACHE.
