Gluten Free Sourdough Pumpkin 💫 For all the soup weather days ahead and beyond, you need this sourdough pumpkin with seeds inside and out. And soup of course. What’s your favorite sweater weather soup? What’s your favorite food that gathers everyone around the table? Specs: 300g gluten free bread flour @kingarthurbaking 90g gluten free sourdough starter 350g water 6g salt 9g sugar 10g olive oil A handful (or more) of toasted mixed seeds Process: * Mix everything together * Break up lumps as much as you can * Let rise for 6hrs at 80F * Shape and roll in seeds (untoasted) * Cold retard overnight * Freeze dough for 45mins * Score and tie (or not) as shown in reel * Bake with steam for 30mins @ 500F, without steam for 30mins @ 450F A few notes on GF sourdough: ✅ See post in Gluten Free highlights for how to make your own GF sourdough starter ✅ GF flour needs more water so go high on hydration ✅ The dough is super sticky at first but give it time ✅ No stretching or folding needed ✅ Don’t expect the dough to double in size but it should expand considerably with a nice bounce when well fermented ✅ Don’t expect the dough to be baby soft and smooth ✅ Handle with care when shaping.
