Black Garlic Butter Pasta 🍝 5 ingredients and 15 minutes for this funky little spin on a childhood classic. I feel like most people have some sort of butter carb go-to dish - you know, the one that you'd make when the parents were out and you had to fend for yourself 😅 For me it was butter, garlic soy sauce noodles and I had a total craving for these today. Found some leftover black garlic in the fridge (that @tomlevick_ made for us ❤️) to throw in this dish and ermergerd it was INCREDIBLE. If you can get your hands on some black garlic you MUST give this a go (though normal garlic also works!). Recipe 👇 (makes 2 big bowls) Ingredients 300g dried pasta of choice 4 cloves black garlic (or normal garlic) 110g butter (room temp) 1 spring onion (sliced, whites and green separated) 2 Tbsp soy sauce Method 1) Bring a large pot of salted water to the boil and cook your pasta until aldente. 2) While your pasta is cooking, mash the garlic, a pinch of salt, butter and spring onion whites together to form a compound butter. Set 2 heaped teaspoons of the compound butter aside, then fry the rest in a large sauce pan over medium heat for about 3 minutes or until the garlic and spring onions are cooked through. Add the soy sauce and a ladle of pasta water and stir until an emulsified sauce forms. 3) Add the pasta straight from the pot into the sauce and toss through until the butter coats the pasta (add another ladle of pasta water if required and toss again). Divide pasta across 2 plates, top each plate with the reserved compound butter and scatter over spring onion greens.
