Just back from a gorgeous walk over the Shropshire hills (3 weeks tomorrow until the Long Mynd Hike - eeek!) Tasty snacks very much needed - I’m thinking my pea & mint fritters with creamy cashew cheese & salsa verde ❤️ You can top with your favourite dips, vegan cheese, dressings, pickles - anything you fancy 🤩 Here’s the recipe, enjoy xxx For the fritters ; 250g frozen pea, defrosted 1 tsp garlic powder 2 tbsp nutritional yeast 1/2 lemon juice Handful dill Handful fresh mint 1 tsp baking powder 1 tsp salt Black pepper 85g self raising flour For the cashew cream cheese 200g cashews soaked for at least 2hrs 5 tbsp nutritional yeast 1 tsp sea salt 1 tsp smoked garlic granules 2 tbsp apple cider vinegar 100ml water 3 tbsp chives chopped For the salsa verde; 2 cloves garlic finely chopped Handful mint chopped finally Handful basil chopped finally 4 tbsp extra virgin olive oil 2 tbsp capers 2 tbsp apple cider vinegar 2 gherkins finely chopped 1 tsp wholegrain mustard Pinch sea salt flakes Now the peas along with all the other ingredients to a food processor (apart from the flour). Blitz until a rough paste is formed, then add the flour and blitz again briefly. In a frying pan, add a little oil, then scoop up 1 heaped tbsp of the mix and carefully dollop into the pan, flattening with the spoon to shape into a circle.
