I had the pleasure of dining at Lou’Mar, the new restaurant in Beverly Hills, where chefs Marcos Spaziani and Louis Huh have crafted a culinary collaboration that takes fusion cuisine to new heights. Crispy Brie. A combination of the crispy brie with truffle honey, candied walnut, arugula, and a touch of orange mustard foam. Each bite was a perfect balance of creamy, crunchy, and tangy notes. The Upside Down Tostada. The red snapper ceviche, paired with creamy avocado, onions, cilantro, and aji amarillo, created a refreshing and zesty combination. The vibrant colors and textures made it a feast for both the eyes and taste buds. The Cachapa was a revelation. A fresh corn pancake, generously filled with mozzarella, aji verde, garlic aioli, and topped with delicate micro herbs. The sweetness of the corn pancake perfectly complemented the savory elements. The K-Crisp Chiccarones, featuring crispy chicken skin chicarrones tossed in Korean sweet and spicy sauce, sesame seeds, and green onions. The combination of textures and the bold flavors of the sauce made it an addictive dish. The Vegan Chicken, made with tofu breaded in corn flakes. The crispy exterior and the flavorful sauce made it a satisfying and guilt-free indulgence. The Charred Octopus. The tender octopus, accompanied by shishito peppers, fingerling potato, pork belly, gochujang aioli, and a touch of sweet and spicy sauce, created a delectable blend of flavors. Filet Mignon. The perfectly cooked steak, served with a velvety sweet potato puree, roasted rosemary apples, and a tantalizing wine reduction, was an amazing combination of flavors. The pickled Fresno and onion added a delightful tang that elevated the dish. Overall, the culinary collaboration resulted in a menu that seamlessly blends flavors from different cuisines, creating a unique and unforgettable dining experience.
