Jalapeño Cornbread Madeleines with Pimento Cornbread: 1C Cornmeal 1C AP Flour 1/4C Brown Sugar 2tsp Baking powder 1/2tsp salt 2 whole @happyeggcousa eggs 3/4C melted butter 1 + 1/4C whole milk 1 Cobb corn cut off 1/2 jalapeño seeded and small diced Pimento: 2C Shredded sharp cheddar 8oz room temperature @phillycreamchs 1/2C @dukes_mayonnaise 1/4tsp garlic power 1/4tsp onion powder 1/8tsp cayenne Salt to taste -To make pimento combine all ingredients except shredded cheese. Mix well. Once incorporated add shredded cheese and mix again. -Prep vegetables as seen -Combine all addy ingredients for cornbread into a bowl, mix until well combined. -Combine all wet ingredients into a separate bowl, mix until combined. -Mix wet into dry, let sit for 30 minutes minimum to let the cornmeal hydrate. -Heat oven to 425f -Brush madeleine moulds with butter -Bake for 11-12 minutes until browning on the outside. -Enjoy with pimento while still warm.
