Soak 1 cup a Channa dal for 4 hours Salt 1/2 tsp Turmeric powder 1/2 tsp Oil 2 tsp 2 green chilli 5-6 Black pepper 3-4 cups water Pressure cook 3 whistle, op n and mash little Tempering 2 tbsp oil 1 tsp cumin seeds 1/2 tsp ginger grated 2 dry red chilli2 tbsp corainder leaves stem 1/2 tsp coriander powder 1/4 tsp turmeric powde 1 tsp Kashmiri red chilli powder 1/2 tsp amchoor powder For the dough 1 cup maida 1 tbsp Rava 1 tbsp jeera Salt to taste 1/4 tsp cumin seeds 1/4 tsp ajwain or carom seeds 1.5 tbsp oil Chilled water 1 tsp oil to knead again Method: For the pakwan: 1. In a bowl, combine all ingredients and knead medium dough, not soft neither firm. 2. Cover bowl and let dough rest for 15-20 minutes, divide the dough in 8-9 portions 3. Roll out each portion of the dough with a rolling pin and prick it with a fork at regular intervals to prevent puffing. 4. You can airfry u tip crispy at 200 degrees of Heat oil in a deep pan and deep-fry it on a medium flame until crisp and golden brown on both sides. 5. Drain on an absorbent paper. For the dal 1. Soak the lentils in water for 2-3 hours & Pressure cook chana dal with water, turmeric, asafoetida and salt for 3 whistles. Tempering 1. Heat oil in a deep pan. 2. Add cumin seeds crackle and add everything else, add dal and cover and cook for 5-6 minutes 3. Garnish amchur/dried mango powder and freshly chopped coriander leaves. 4.
