PISTACHIO LOAF CAKE WITH BERRY FROSTING I feel like pistachio is so underrated in baking or an underrated flavor in general! If you love pistachios then you will definitely love this and the berry frosting elevates this even more 😋😋😋 - How do you feel about pistachios? - - Ingredients: 🍵 1 cup vanilla yoghurt (soy, 250 g) 🍵1/2 cup pistachio butter (128 g) 🍵 1/4 cup sugar (60 g) 🍵 1/2 tsp vanilla 🍵 1/4 cup oat milk (60 g) 🍵 1 1/4 cup flour (178 g) 🍵 1 tbsp baking powder 🫐 1/2 cup frozen mixed berries (70 g, warm/thawed) 🫐 1/3 cup (vegan) cream cheese (75 g) 🫐 1 tbsp sugar (15 g) - First mix the wet 🍵 ingredients together until a smooth mixture forms and then add the dry 🍵 ingredients. When a batter forms add to a greased baking tin and bake at 180 C (375 F) for about 45 min or until a knife comes out clean. Let the loaf cake cool completely before adding the frosting. For the frosting mix the 🫐 ingredients together and if it is a little runny let it set in the fridge for about 30 min.
