Zaalouk (Fried eggplants dip) Serving: 4 servings Ingredients For the eggplants 3 medium eggplants 1/2 teaspoon salt 60ml (1/4 cup) vegetable oil For the Zaalouk 1 tablespoon olive oil 3 garlic cloves, peeled and grated 2 medium tomatoes, peeled and cut into small cubes 1/4 teaspoon salt 1/2 teaspoon cumin 1 heaping teaspoon paprika 1/4 teaspoon chili powder (to taste) 1 tablespoon finely chopped cilantro and parsley Step 1: Preparing the eggplants 1- Cut off both ends of the eggplants. Peel the eggplants making sure to leave some of the skin intact. 2- Cut the eggplants into large cubes. Salt the eggplants and mix to combine. 3- Heat the oil in a frying pan over medium heat, then fry the eggplant cubes until golden brown. 4- Set the fried eggplant on a plate lined with paper towels to absorb the excess oil. Step 2: Preparing the Zaalouk 1- In a frying pan over medium heat, add the olive oil and garlic and cook until the garlic changes color (about 1 minutes). 2- Add the tomatoes and cook for 5 minutes. 3- Add the spices and herbs, then mix to combine. 4- Add the fried eggplant and cook for 2 minutes.
