Indulging in the rich flavors of Simply Jamaican Sweet Potato Pudding – a taste of the tropics in every bite! 🌴🇯🇲 Simply Sweet Potato Pudding with Coconut Custard Recipe Ingredients: ● 1 tsp Simply Nutmeg Extract ● 1 tsp Simply Mixed Spice ● 1 tsp Simply Almond ● 1 tsp Simply Vanilla Extract ● 1 tsp Simply Rose Water ● 1 tsp Simply Cinnamon Extract ● 2-2 ½ pounds of Sweet Potatoes ● 1 pound of yellow or white Yam or Dasheen ● 3 cups Coconut Milk ● 1 cup Grated Coconut ● 1 ½ cups Flour ● 2 cups Sugar ● 4 Tbsp Melted Butter (equivalent to ¼ cup) ● 1 tsp Salt Instructions: Preheat oven to 350°F (180°C). Peel and grate/blend the sweet potatoes and yam/dasheen. Combine in a large mixing bowl. To mixing bowl, add grated coconut and flour and combine together. In another mixing bowl, combine coconut milk, sugar, salt and the following Simply flavourings and extracts (almond, rose water, cinnamon, mixed spice, nutmeg). Stir this mixture until all the ingredients are well incorporated. Gradually pour the liquid mixture into the bowl with the dry ingredients. Stir until everything is fully combined and a thick batter-like consistency is achieved. Grease baking tin with melted butter or line it with parchment paper. Carefully pour the sweet potato pudding mixture into the prepared baking tin, spreading it evenly. Cover the tin with aluminum foil and place it in the preheated oven. Bake the pudding covered for 1 ½ hours. After 1 ½ hours, remove the foil from the pudding. Prepare the coconut custard by mixing a portion of the grated coconut with a bit of sugar and coconut milk to form a thick paste. Spread coconut custard evenly over the top of the pudding. Return the uncovered pudding to the oven and bake for an additional 40-45 minutes or until the top is golden brown, and a toothpick inserted into the center comes out clean.
