Whole grilled slices of eggplant fit so well in to a half gallon mason jar. This dish has the gratification of completing a beautiful aesthetic task with the added benefit of being able to eat it. I slice the eggplant about a third of an inch thick and put them directly on the grill. They come off grill after they’re nicely browned in both sides and I’ve cooked them total of about eight minutes. Next, I stack them in a mason jar inter-layered with more salt and aromatics. The half gallon size does fit the slices perfectly, but you could also stock them edge-side down in a quart size jar (which is more widely available). I add a ton of aromatics to the grilled eggplant - what I used in this video is just the beginning! Here I took some fresh garlic (you can see me use my favorite @messermeister knife to peel the cloves), dried oregano, and a bit of salt. I would also recommend fresh or dried chili, fresh, oregano, fresh rosemary, cut pepper, thyme - fresh or dried - shavings of shallots, onion tops… The list goes on! I fill the jar with @amphoranueva olive oil to marinate and let rest for at least three or four hours at room temperature or even better overnight in the fridge. The oil can be reused for cooking or salads and the eggplants will stay fresh in the oil for over a week. I like the roasted and marinated slices of eggplant drizzled with a little bit of red wine vinegar, or just eat them plain.
