GF DF Oatmeal Chocolate Chip Cookies 🍪🤗 another #RGECookbookClub recipe because it’s the last week to enter for the chance to win prizes valued at $5,000 🤭 Search ‘Good Eats Month’ on my blog to learn more (link in bio) ‌ My grandma made these for us all the time growing up, so I’m returning the favor and bringing these to her 100th birthday party today 🥹🎈 I made them refined sugar-free, gluten-free and dairy-free. Perfect Fall cookie that’s not too sweet! ‌ Makes 12 (I doubled the recipe and made bigger cookies for these) 1 large pasture-raised egg 1/4 cup tahini 3 tbsp coconut oil, melted 2 tbsp maple syrup 1 tsp vanilla extract 1 cup plus 3 tbsp sprouted rolled oats 1/3 cup nondairy chocolate chips 1/4 cup almond flour 3 tbsp coconut sugar (extra 2 tbsp if you like a sweeter cookie 💫) 2 tbsp ground flax 1/2 tsp baking soda 1/2 tsp flakey sea salt, plus more for finishing 1/4 tsp ground cinnamon ‌ Directions: Preheat oven to 350 degrees F and line a baking sheet with parchment paper. In a large bowl, whisk together egg, tahini, coconut oil, maple syrup, vanilla until smooth. Sprinkle the oats evenly over the wet mixture, followed by remaining ingredients, then mix. Using a medium sized cookie scoop or two piled spoons, divide dough evenly on baking sheet. Bake for 11 to 12 minutes, until the edges begin to brown on the edges. Let cool on the pan; then finish the cookies with another pinch of flakey sea salt.
