Ve-du-ya like it Hot? Remember my ‘Nduja stuffed tomatoes? Well, I thought it was time I had a go at Veganising this idea! Ve-du-ya stuffed vine tomatoes on a base of puréed steamed organic courgettes, garden peas, smoked garlic and oat cream, topped with the most incredible vegan Stracciatella from @iamnutok . I’m starting to play around with a few ideas for a pop-up I’ll hopefully be doing in November (I’ll keep you posted!) and this fellow has been brewing in my mind for some time now. I’ve always loved a good creamy courgette based pizza, so I chopped a few up (Thank you Laura!) , steamed them with some smoked garlic and peas, then blitzed them with a good glug of oat cream, EVOO & salt & pepper. An absolutely delicious purée base, made even more delicious with a sprinkle of “Oh Grate!”, a vegan alternative to Parmesan from @iamnutok too. This stuff is incredible, garlicky, salty, umami, truffle-y, so good, then topped with my veganised Ve-du-ya stuffed vine tomatoes! When cooked, these tomatoes explode in your mouth in a riot of incredible tomato & Veduya flavours. If you haven’t tried them yet, please do, it’s worth the faff! Post bake topped with the most incredible vegan Stracciatella I have ever tried, once again from @iamnutok . This pizza was so damn good. I loved every bite. I’m running out of space here! I reckon you will really love it, and that vegan Stracciatella is the 💣!
