Sweater weather or soup season, ‘tis the season to warm up! Ultimately this recipe has many benefits. It’s vegetarian! It’s cheap to make! It’s waste trimming(look up legumes)! It reminds me of my TATA(RIP)! Lentil soup recipe 1/4 c @mina olive oil 3-4 onions chopped small 1 carrot 🥕 chopped fine 2 c red lentils 2/3 cup rice 🍚(optional) Salt & pepper 3-4 bullion cubes 6-8 cups water or broth 1 tsp cumin optional Vegeta for flavor -Vegeta is a vegetable base seasoning salt it’s almost like a powdered chicken stock but it’s a vegetarian Parsley & lemon 🍋 1. Sauté onions in ghee till translucent. Then add carrots. After 10 minutes of sautéing veggies add water or stock. If using stock, do not add bouillon cubes. Once everything comes to a simmer add your washed and drained lentils. In approximately 15 minutes or once the lentils have begun to dissolve add rice. Your lentils will have dissolved almost halfway. Continue mixing so that your soup does not stick to the bottom of the pot. Continue stirring every five minutes and simmer. Don’t forget to add your cumin if desired. The lentil consistency is your choice. I cook mine until they are pretty much dissolved. You can also completely omits the rice in this dish. If you’re having a hard time with your lentils dissolving, you can use an immersion blender. But you’ll have to cook your rice, separate and add the rice after you’ve emulsify the soup.
