RECIPE: Radicchio and Sticky Quince Syrup (perfect for Sunday lunch). Radicchio - it’s beautiful, bitter… so bitter and matches so well with sticky quince syrupy, pork, fennel and cheese, something like halloumi or feta. Radicchio seems to grow itself in our garden, which is a bonus. Here is tonight’s variation on this salad. Radicchio, preserved lemons, Florence fennel, sheep’s feta and sticky quince syrup. (Serves 4 adults as a small salad with pork chops and a very good mashed potato). 🔺one Raddichio - I peeled the outer green leaves, I’ve kept these and will use to cook with. Then individually separate the purple leaves right through to the heart and rinse. 🔸Preserved lemon- I only used one lemon quarter - skin and flesh all diced. ▪️a baby Florence fennel, sliced thinly and flat parsley leaves. 🔹 @meredithdairy sheep’s feta I used 3 cubes of this beauty. ◽️Salad dressing: In my salad prep bottle I poured in a good lug of @riovistaolives oil @maggie_beer red wine vinegar (equal amounts of each, zest and juice of one lemon and one tblspn of sticky quince syrup. Shake the bottle until thoroughly combined. 🔺Salad assembly: Place your radicchio leaves in your serving salad bowl/plate one layer at a time. Top with sliced fennel, lemon, parsley, dollops of feta. Then finish with the salad dressing.
