Mango Sticky Rice Bingsu 🥭🍚🍧 This Thai-inspired bingsu combines two things I love: mango sticky rice and bingsu. Bingsu 빙수 is a Korean milk-based shaved ice and one of my favorite summer treats when it’s too hot to exist. I used an ice shaving device, but you can just freeze the milk/condensed milk combo in a zip lock bag and crush the ice using a rolling pin. I’ve had lots of big life changes happen this year (and more transitions to come!) but learning how to do a push-up is still one of proudest personal accomplishments. What’s something you’re proud of this year, big or small? 😊 Ingredients: 🥭 1.5 cups full fat milk 🥭 2 tbsp sweetened condensed milk 🥭 5 tbsp cooked glutinous sweet rice 🥭 1 cup coconut cream 🥭 1/3 cup sugar 🥭 1/4 tsp salt 🥭 1 large mango, peeled, pitted, & sliced 🥭 1 tsp black sesame seeds Instructions: 1️⃣ Mix together milk and condensed milk and freeze in an ice cube tray for ~3 hours or until frozen solid. 2️⃣ Cook the sweet rice (I made more than needed for the recipe and used a 1:1 rice:water ratio). 3️⃣ Add coconut milk to a pot and bring to a boil. Add in the sugar and salt and stir until dissolved. 4️⃣ Transfer ~5 tbsp cooked rice to a bowl and stir in 1/3 cup of the coconut cream mixture. Let the rice stand for ~30 minutes until the coconut cream is absorbed, then shape into small balls or one big ball. 5️⃣ Crush milk ice cubes with an ice shaver or food processor or add to a ziplock bag crush with a rolling pin. 6️⃣ Place shaved ice in a bowl, top with mango slices and sticky rice, then pour the remaining cooled coconut cream over the ice.
