creamy sweetpotato and chickpea stew with harissa and tahini happy thursday my friends, how are you doing? are you taking good care of yourself 🤍? i am non stop listening to jazz and the rainy weather makes listening to jazz even more beautiful (well, this is what I tell myself to stay positive lol). most of the weekdays i am fasting till lunch and try to drink a lot of water and green tea at work to stay hydrated. eating a big bowl of this creamy, comforting, warm and spicy stew was the perfect way to break my fast. i make so many variations of this chickpea stew . this one was with bell pepper and harissa and i loved it so so so much, so it is worth a recipe post ;). the harissa paste tastes super rich, bold and complex and gives this dish some heat and depth of flavor and i loved adding maple syrup for balance. just comfort food at its best and super pantry friendly.
