How to make… Chicken and leek pie Filling: 150g pancetta(lardons) 4 large Chix thighs 1 onion(diced) 2 cloves garlic(minced) 1 large leek(chopped) 3 bay leaves 75g butter 75g flour 500g stock(or water) add a splash of wine if you like(we had drank all of ours!😬) 100g sour cream Lemon, olive oil, S&P 3 tbsp mustard Fry pancetta in a little olive oil, add Chix cook for 4 minutes. Set aside, deglaze with butter, add onion, garlic, bay, cook until soft. Add leek, cook a little, pop in flour mix for a minute, add stock. Bring to boil. Turn off heat. Add peas and herbs. Season with lemon, sour cream, mustard, S&P, as always, taste during the cooking process. Pop in a pan, chill. Cover with pastry. Bake at 185deg til golden. 🍋🍋🍋 Rough puff pastry 250 butter (chilled and diced) 250g flour (sifted) 150 water(chilled) Pinch of salt Mix butter and flour to chunky breadcrumbs. Mix in water, to a shaggy dough. Shape and roll into a thick rectangle between two sheets of baking paper. It’ll look a bit shabby at this stage which is great. Cool in the fridge. Once chilled roll into a thinner rectangle just under 1cm thick. Fold the sides into thirds onto each other. Roll this rectangle out again to just under 1cm. Chill, then Repeat this process. Roll out to 4 - 5mm, cut out a circle. Score + egg wash…Shes good to go! Sounds like a punish but actually really simple. Of course, using store bought it a pretty solid plan B! Serve up the pie of dreams with salad. This was so delicious… Kids new top 3!
