I love how the light peanut flavor is ideal for brownies, cookies, muffins, pancakes, and quick (non yeast) breads. 👩🏻‍🍳 I like using it for our dessert and baked goods and can’t wait to try it in more recipes. It was perfect for these chocolatey Gluten-Free Vegan Peanut Chocolate Cookies, they have the perfect texture and light peanut flavor addition! 🍪🥜 //SAVE THE RECIPE// 🍪GLUTEN-FREE VEGAN PEANUT CHOCOLATE CHIP COOKIES🍪 INGREDIENTS -1 & 1/4 cups PBfit Peanut Flour Baking Blend -1/2 tsp baking soda -1/2 tsp salt -1/2 cup coconut oil or vegan butter 1/3 cup brown sugar -1/3 cup granulated sugar -1 flax egg mixture (1 tbsp water mixed into 2 tbsp water) -1/2 tsp vanilla extract -1 cup semi-sweet vegan chocolate chips (Makes 12-15 cookies) INSTRUCTIONS 1. Preheat oven to 350°F. Line a cookie sheet with parchment paper or a silicone baking mat. Set aside. 2. In a medium bowl, combine PBfit Peanut Flour Baking Blend, baking soda and salt. Set aside. 3. In large mixing bowl , cream coconut oil and sugars until light and fluffy. Add in flax egg and vanilla. Mix until smooth. 4. Mix dry ingredients into wet ingredients until oombined. Add chocolate chips and mix. 5. Scoop dough onto cookie sheet leaving about 2 in. edges. 7. Remove from the oven and transfer to a wire rack to cool completely.
