A very #berry cake with #chocolatedrip and #berries #Summer is the time when you get the most precious and delicious gems of nature: the berries. As much as they are delicious as their own, when it is in abundance there is a perfect excuse to use them in cakes. Or, you can freeze the fresh summer jewels to be used later in the year. This very berry cake has berries in the sponge as well as a berry compote as a filling. And as if it is not enough, there are more berries to decorate the date. A decoration tip: if you put a tsp of gold or any edible metallic dust colour in a bowl and toss berries in that, you will get gilded berries. They look gorgeous as you use them for decoration. Please find the recipe for the sponge below #Recipe Ingredients For the berry sponge 6 free range eggs 300g caster sugar 300g soft unsalted butter 300g self raising flour(plus a Tbsp extra to coat the berries) 0.5tsp baking powder 1.5tsp vanilla bean paste 200g frozen berries Method Preheat the oven to 160 C Fan. Grease and line three 20cm baking tins with butter and baking paper. Toss the berries in flour and set aside. Whisk the rest of the ingredients in a large mixing bowl, till well combined, for about a minute. Then, scrape the sides and whisk for further 30sec. Finally sprinkle the flour coated berries in the batter and carefully fold them in. Divide the batter equally in the prepared tins and bake in the preheated oven for 25-30mins, or the sponges start to come off from the sides of the tin. Once baked, take the sponges out of the oven, and let them cool in the tin for 10 mins. After that place the sponges on a wire rack to cool completely. Then, stack the cooled sponges, with berry compote, Swiss meringue buttercream. Finally, decorate with chocolate drip and berries. Enjoy!
