COOKING WITHOUT HEAT / RECIPE 👨‍🍳💚🌱 Green Goddess Salad with Artichokes, Beans and Greens To make this salad a satiating meal without the need for any cooking, I’ve included white beans, baby artichokes, courgette and crunchy pumpkin seeds to fill it out with a vibrant variety of delicious plants.  What you will need:  For the dressing 4 tbsp aquafaba (the cooking liquid reserved from the beans used in the salad)  1 small garlic clove 1 tsp Dijon mustard 2 tbsp capers 1 tbsp caper brine 50g mixed herbs e.g flat parsley, chives, tarragon 50g baby spinach 1 tbsp miso, optional 150-250ml extra virgin olive oil  2 tbsp white wine vinegar For the salad - serves 4 as a main  200g baby spinach  100g kale, stalks finely chopped leaves shredded  1 tin of beans, drained, I used haricot (reserve the aquafaba, cooking liquid, for the dressing) 1 courgette, peeled into ribbons   1 pear, peeled into ribbons   1 fennel bulb, peeled into ribbons   4 baby artichokes, quartered  2 tbsp pumpkin seeds Sprouts, to top, optional  (follow the link in my bio for the full recipe on my website) @eonenergyuk #EON #AD #Cookingwithoutheat #saveenergy #cookclever #greengoddess #greenfood  #saladdressing #miso #fastmeals #alfresco #recipe #sustainablecooking #salad
