Hi everybody! This is one of my favorite recipes I’ve developed so far. One of y’all made my recipe and told me you added a cream cheese frosting to the top ! I was immediately so jealous i had to make it myself 😂 it was my first time making a cream cheese frosting so i think i could tweak the recipe a bit more but for now, i ate almost all of these and have one left. I’ll let that speak for itself 😂🧡 What you need: 2 cups almond flour @natureseats 2 eggs 1 teaspoon of vanilla 1 teaspoon cinnamon 1/2 cup melted butter pinch of kosher salt 1 large finely chopped carrot (or one cup chopped) 1/3 cup of brown sugar 1 teaspoon baking powder What to do: - Preheat your oven to 350 degrees. - Mix the wet ingredients the eggs, melted butter, & vanilla. - Add in the cinnamon, vanilla, salt, almond flour, baking powder & mix. - Then add in your chopped carrots. - Put the batter into an 8x8 pan lined with parchment paper. - Bake for 30-35 minutes or until a toothpick comes out dry. For the cream frosting, what you need: 8oz of cream cheese 1 cup of powdered sugar 1/2 cup of heavy cream (use less if you want a thicker frosting) Vanilla extract Cinnamon - blend all frosting ingredients with an electronic mixer for 5 minutes on medium-high or until thickened. Place in the fridge for at least half an hour before spreading on top of the blondies.
