SPICY MASALA POTATOES• Sometimes we like to skip a protein dish all together around here and go for a simple potato and rice or potatoes and warm naan. These spicy masala potatoes are perfect for those days! They’re packed with flavor you won’t even find yourself missing protein. •two 1.5 lb bags of baby Dutch potatoes cut in half •In a pan add 4 tbsp butter. Once melted add 1 tbsp minced garlic, sprinkle of red crushed peppers to preference and 3 mini sweet peppers finely chopped. Allow to sauté for 2 minutes •Add 2 tbsp sweet/mild pepper paste •+ all your spices: 2 tsp ground coriander, 1 tsp ground cumin, 1/2 tsp turmeric, 1/2 tsp paprika, and salt to taste (i only did about 1/2 tsp). Mix well. •add water (about 1 cup) and close the lid.
