Tandoori Chicken Traybake Here is a gorgeous marinade which works beautifully with chicken & lamb, but also salmon and chunky white firm fish. As always, it’s really simple to make, with amazing results. Is this something you would enjoy? Serves 4 INGREDIENTS 8 chicken thighs 1 medium red onion - sliced into 8-10 wedges Lemon & coriander to finish Marinade 2 cloves garlic - crushed 1 teaspoon grated ginger 1 tablespoon tandoori spice mix 1 teaspoon smoked paprika 1/2-1 teaspoon chilli powder (or to taste) 2 teaspoons ground cumin Juice 1/2 lemon 1 tablespoon natural yogurt 1 teaspoon honey METHOD Preheat the oven to 200 #c conventional. Mix the marinade together and coat the chicken thoroughly. Leave for 30 minutes if you have time. Sit the chicken on a bed of onions. Season generously and drizzle with a little oil - I used olive oil. Cover with foil and cook in the oven for 20 minutes. Remove the foil and cook for a further 20 minutes or until golden and tender. For chicken breasts - no need to cover with foil.
