Iraqi Dolma in collaboration with @yumcrunch ——- Our first video from the series “Flipping the pot” —————- Iraqi Dolma is a tender and juicy layered stuffed veggies that will for sure be a show stopper for any of your family and friends gathering, the flipping itself is a spectacular event that has kept all my friends talking way after the party was done! Here I’m sharing a family recipe with my signature sauce that i add at the end to add much more flavor to it. If you would like a longer descriptive version of this video then please check out the one on Tiktok To make it: Iraqi Dolma For the vegetables: 4-6 medium round onions 3-4 small tomatoes
3-4 small zucchinis
3-4 small eggplants 4-6 sweet peppers
A bunch of chard leaves or grape leaves
450g frozen broad beans For the stuffing
900g minced meat (80% lean, 20% fat) 2 large onions, minced 100g rice
2 garlic cloves (optional)
4 tbsp tomato paste
3 tsp salt Pepper
6-8 tbsp pomegranate molasses My signature mixture: 2 cups water 125gm tbsp tomato paste 100gm pomegranate molasses 2 tsp salt 2-3 tbsp olive oil (optional- if your meat isn’t 20% fat then add this) Other ingredients: 4-6 pcs beef or lamb ribs
