Falafel 1lb dried chickpeas (soaked in water overnight) 1 bunch parsley washed and chopped 1 bunch cilantro washed and chopped 1 Jalapeño seeded and chopped 1tsp cumin 1tsp ginger powder 1tsp coriander 1tsp dried mint 1tsp baking powder 2 Tbsp salt 2 cloves garlic Juice of 1 lemon 3Tbsp tahini -Drain soaked chickpeas. Prep all vegetables. -To make sauce crush garlic, add lemon juice. Let sit 5 minutes. -Add tahini and 3 Tbsp ice water. Mix well. -Emulsify with EVOO and add salt to taste. -Grind chickpeas through a meat grinder (a food processor works also) -Grind herbs, and jalapeño also. -Once everything is ground, add dry spices, 2Tbsp salt, baking powder and mix well. -Heat neutral oil (I use avocado) to 350f -Fry falafel a few at a time until golden brown and crispy ~4/5 minutes -Season with salt. Serve with salad and tahini. Enjoy.
