Spring Onion Oil Focaccia ๐๐ฟ I love a good focaccia and this one might be my new favourite one to make! Loaded with spring onion oil and a combo of crispy + fresh spring onions this is an excellent carby way to use up those leftover spring onions! (did I mention it had spring onion in it?) Recipe ๐ Ingredients 3 spring onions 80ml olive (or vegetable) oil 500g bread flour 310ml water 5g yeast 5g sugar 50ml warm water 15g salt Flakey sea salt Method 1) To make your spring onion oil, separate the whites and greens of the spring onions. Cut the whites into strips (lengthways), cut the greens into small slices. Add the oil to pan and fry spring onion whites until golden brown. Strain out the oil and reserve the crispy bits. 2) To make your focaccia dough, combine warm water, sugar and yeast in a bowl and let the yeast activate (about 5 minutes). Dump in your flour, rest of the water and salt and mix with a spatula until combined. Add 50ml of the spring onion oil and mix/knead with spatula until you can't see any more oil left (takes about 6-8 mins). Cover and set aside to proof for 40 mins. 3) After 40 mins, uncover dough. Scatter a quarter of the crispy spring onions and a quarter of the spring onion greens on the dough then using wet hands fold the dough over itself. Rotate bowl 90 degrees, scatter and fold. Repeat until you have folded 4 times and there is no more spring onions left. Cover dough and set aside to proof for another 40 mins then do another four folds. 4) Cover base and sides of baking tray with spring onion oil. Wet your hands and slip them underneath the dough, gradually let the dough stretch into the tray. Leave for 10 minutes, then spread dough out as much as you can to fill the tray. Rub spring onion oil on your hands then dimple the dough by pressing down into the tray. Spoon over more oil then let dough proof one last time for 45 minutes. 5) Preheat oven to 220C. Sprinkle flakey salt over the dough and bake on med-low rack for 25-30 minutes. Once golden brown, remove from oven and stand for 30 minutes before removing from tray.
