Eating healthy doesn’t have to be boring! 🤘 Salmon Bowl with veggies (makes 4 servings) Sockeye Salmon (5oz per serving) Cooked Jasmine Rice 1 Avocado 2 carrot 2 cups sugar snap peas 1 bell pepper 1 mango 1 cucumber 5 oz Plain Greek Yogurt 2 cloves minced garlic 2 Tbsp lemon juice 1-2 Tbsp Sriracha (more or less spicy) salt and pepper In a small bowl combine the yogurt, garlic, lemon juice, sriracha, salt and pepper. Mix this very well and set aside. Slice the mango and avocado into thin strips, Cut the cucumber into thin rounds, peel the carrot and then use the peeler to make thin layers, and then slice the peas into smaller pieces. Set these all aside. In a pan over medium high heat add the oil and allow to heat up. Season the salmon with salt and pepper and then place in the hot pan skin side down. Cook for about 4 minutes and then flip and cook for another 2 minutes. Once cooked to desired temperature remove from heat and set aside.
