Craving to be back home now but this special workshop on millet breads (gluten free and sourdough) that I am doing for @chefvikaschawla in Chandigarh has been a great joy to say the least. When you are trying half a dozen type of millet flours for these breads and even doing sprouted millet breads that you start from seeds, it’s a fulfilling experience altogether. Chef Vikas has been doing some great work with millets and has started the first millet restaurant in Chandigarh, serving some lip smacking food. His millets are coming from local farmers who process the millets for better taste and nutritional profile. The breads are definitely reflecting the quality and thanks to my favourite oven from @unox_india for this purpose, the baking process has been an absolute joy. I know many of you will ask why I am not hosting the zoom workshops but my work schedule has been such that I have barely been getting time to rest and recuperate.
