Rustic Baby Potatoes Ingredients 450 gms Potatoes 200 gms Cauliflower & Broccoli 2 tsp Cumin Seeds 2 tsp Coriander Seeds 2 bay leaves 1 tbsp Shokaz Spice 2 tbsp Duck Fat/ or butter Method 1. Boil potatoes, garlic and bay leaf for 8mins 2. In a separate pot boil cauliflower and broccoli in salted water for 5 mins 3. Remove potatoes, garlic and bay leaves and drain excess water (discard bay leaf ) 4. In a skillet add duck fat and fry off cumin and coriander seeds for 3 mins making sure not to burn them 5. Add potatoes and sprinkle 1 tbsp Shokaz Spice and fry over high heat to char potatoes 6. Turn the heat down to low and cook potatoes for 20 mins add cauliflower and broccoli sprinkle a little more Shokaz Spice garnish with fresh thyme and enjoy with meat, fish or chicken #woodkitchenzm #shokazspice #rusticpotatoes #potatoes #quickmeal #sidedish #safood #zambianfoodie #africanfoodie #homecooks #hindsspices
