Caramelized Pineapple Custard 1 large pineapple cut into rings & hollowed out 6 egg yolks 1/2 cup sugar 1 & 1/2 cup cream 1/2 cup whole milk 1 & 1/2 Tbsp Dark Rum 2 vanilla beans -Cut pineapple as seen. Use cored piece to make small dice -Add cream, milk, vanilla to a pot. Bring to a boil while stirring. -Cover pot, turn off heat and let steep 30 minutes. -Add yolks and sugar to a bowl, whisk well. Add rum and continue to whisk. -Strain cream mixture into yolks while whisking vigorously. -Return mix to pot, coo over medium/low heat until thickened as seen in video. -Place pineapple ring on plate, fill with dice. pour over chilled custard. Cover with plastic and let sit in fridge overnight to set up. -Sprinkle with sugar and brûlée. Enjoy.
