Have you ever tried this delicious and comforting classic Chinese cuisine?!, I bet that you will love the simplicity on this dish and the authenticity taste in it. This recipe made with 2 simple ingredients, eggs & tomatoes. This is one of my go to quick stir fries for busy weekdays! This ultimate comfort dish is so perfect pairing with rice. Recipe: 2 tomato, chopped 3 cloves garlic, sliced 1 thumb size ginger, sliced 3 tbsp tomato ketchup 2 eggs, beaten 1 tbsp Soy sauce 1/2 tbsp sugar 1/2 tsp white pepper 1/2 tbsp white vinegar 1 tbsp chopped scallions for garnish Method: 1.) Heat oil in a nonstick pan, add the egg and let it set for a few seconds, then stir it gently and crumble it into medium bite size pieces. Set aside. 2.) Heat 2 tbsp oil in a wok, sauté the garlic, then add the chopped tomato and the ginger. 3.) Add in tomato ketchup, water, sugar, white pepper, vinegar and soy sauce. Simmer for 2-3 minutes. 4.)
